Producer & Origin

This coffee comes from Popayán, Cauca, a region shaped by the Andes and known for its stable growing conditions and ideal topography for quality coffee production. The program works with approximately 75 growers and emphasizes long-term relationships, with premiums of up to 20% above market price offered based on quality assessments.

Grown at elevations ranging from 1,500 to 2,070 meters above sea level, these coffees benefit from volcanic ash soils, moderate temperatures, and consistent rainfall, all of which support sweetness, structure, and balance in the cup.

Processing

After careful cherry selection, the coffee is de-pulped and thoroughly washed to remove the mucilage. It is then dried on raised beds for 5 to 7 days until reaching ideal moisture content. This process helps preserve the coffee’s essential character while creating a clean and stable foundation for roasting.
