This coffee comes from Acevedo, Huila, Colombia at 1,750 meters above sea level, where Jhoan Vergara continues to produce highly distinctive coffees through controlled, detail-driven processing. The combination of altitude, climate, and precise post-harvest work helps create a cup with intensity, structure, and clarity.

Processing

This lot begins with cherries harvested at optimal ripeness, with measured Brix levels of 22°–26°. Floaters are removed, and the cherries are washed with 5% alcohol to remove impurities and unwanted bacteria before processing continues.

A thermal shock quenching step is then applied by submerging the cherries in 50°C water for 5 minutes, followed by rinsing in 20°C water for 15 minutes. This rapid hot-and-cold treatment helps fix volatile compounds and preserve the coffee’s fruit-driven character.

Drying is carried out in a hermetically sealed stainless steel dehydrator. The coffee undergoes an initial 40-hour drying stage to bring humidity down to 25%, followed by a 30-hour rest, and then continued drying until it reaches 11.5% humidity. The coffee is then stabilized for 3 weeks before export.
