The Chiroso de San Carlos Project unites 10 producers in Urrao, Antioquia, with the goal of unlocking the potential of this unique variety while creating sustainable opportunities for local families. This semi-washed microlot, grown at 2,000 MASL by Héctor López and neighboring producers, undergoes an extended anaerobic fermentation in sealed tanks before slow sun-drying. The result is a refined cup with layered sweetness, florals, and chocolate-like depth.

About Urrao, Antioquia
Urrao is nestled in the Penderisco River Valley at 1,900–2,000 MASL, a region where smallholder farms average just 1.5 hectares. Coffee here is a way of life, and the Chiroso variety—an elongated heirloom cultivar with remarkable floral and sweet qualities—is becoming a signature of the region.

Chiroso de San Carlos Project
This project unites 10 local producers, including Héctor López, to unlock the potential of Chiroso while building sustainable livelihoods for Urrao’s farming families. With hands-on training in innovative processing, direct-trade partnerships, and full traceability, the project ensures both quality coffee and fair compensation—up to 30% more than traditional sales channels.

Semi-Washed Processing Method
This microlot undergoes a semi-washed (honey-style) process with a controlled 96-hour anaerobic fermentation in sealed tanks. The coffee is then slow-dried with mucilage intact, developing chocolate depth, structured sweetness, and delicate floral complexity. After drying, beans are stabilized in GrainPro for 30 days, refining the final cup.

Once obscure, Chiroso is gaining recognition as one of Colombia’s most exciting varieties. Its layered flavor, combined with Urrao’s terroir and innovative farmer-led processing, makes this coffee both rare and unforgettable.
