Region & Origin
Dimtu Tora is located in the Hambela Wamena woreda of the Guji zone in southern Ethiopia, an area celebrated for its high elevations and expressive cup profiles. Coffee here is grown between 1,900 and 2,300 MASL, where cool temperatures and volcanic soil slow cherry maturation and intensify sweetness.
The region is supported by smallholder farmers who cultivate coffee under natural shade using traditional, environmentally conscious practices that have been passed down through generations.
Organic Farming at Dimtu ToraOrganic Farming at Dimtu Tora
This coffee is certified Organic and grown within an agroforestry system designed to protect biodiversity and soil health.
Shade trees such as Enset, Albizia, Acacia, Militia, and Polyscias create a stable growing environment that supports slow development and complex flavor formation. These sustainable practices help preserve both the land and the long-term viability of coffee farming in the region.
Processing at Dimtu Tora Station
The Dimtu Tora processing station was established in 2022 and is operated by Azeb Tadesse Coffee Supply, a respected name in Ethiopian coffee production.
Cherries are:
Handpicked at peak ripeness
Carefully sorted before drying
Sun-dried on raised beds for approximately two weeks
Dried to a final moisture content of 10 to 12 percent
A voucher-based traceability system tracks cherries from farmer delivery through drying and storage, ensuring transparency and consistent quality throughout the process.
This slow drying concentrates sugars and intensifies the coffee’s signature fruit and floral profile.
Ethiopia Grade 1 Classification
Ethiopian coffees are graded based on both physical quality and cup performance. Grade 1 represents the highest classification, requiring minimal defects and exceptional sensory clarity.
This Guji Dimtu Tora G1 Natural meets those standards, delivering a clean, complex cup with vibrant fruit character and refined sweetness.
