Yellow Bourbon, first identified in Minas Gerais, Brazil in the 1930s, is recognized for its yellow cherries, high natural sweetness, and vibrant citrus structure. When grown at elevation and paired with controlled fermentation, it becomes intensely aromatic and fruit-saturated.
The Peñas Blancas team is known for scientific, precision-driven processing and meticulous lot separation, producing naturals with remarkable clarity and stability.
Processing
This lot undergoes a multi-stage natural process designed to intensify aromatics and preserve structure:
Thermal Shock: 55°C water treatment (30 minutes) to disinfect and reset microbial activity
Anaerobic Fermentation: 72 hours in sealed tanks
Submerged Anaerobic Stage: Additional 24 hours
Drying:
2 days solar drying
36 hours mechanical drying
Finished below 11.5 percent moisture
This method preserves acidity while enhancing candy-sweet fruit depth.
