Produced by Julian Grajales Zilli at Finca Regina in Ixcapantla, Veracruz — a region known for its bright, clean, high-grown coffees. Julian is the reigning Mexican Coffee Roasting Champion, and his farm has gained recognition for quality lots, including a Cup of Excellence Mexico finalist.
Our partnership with Julian is rooted in hands-on collaboration. He traveled to the Kafiex Coffee Lab for a full multi-day training session with Matthew, preparing together on the sponsored World Coffee Championships roasting machine. This release celebrates that cross-border connection.
About the Farm
Finca Regina sits in the mountainous corridors of Veracruz, where cool nights and steady precipitation support slow cherry maturation. The farm produces limited microlots each year, emphasizing clarity, sweetness, and expressive fruit profiles in naturally processed coffees.
This lot represents a small, personal selection tied directly to our ongoing relationship with Julian.
Processing
This is a traditional natural process refined for clarity and fruit expression:
Harvest: Ripe red cherries selectively picked
Sorting: Floated and hand-selected for uniformity
Fermentation: Whole-cherry, ambient-temperature fermentation
Drying: Elevated beds with slow, controlled drying for even development
Stabilization: Rested prior to export to preserve fruit character
The result is a clean natural with bright acidity, balanced sweetness, and a lively, holiday-friendly profile.
