About the Tabi Variety
Developed by Cenicafé in 2002, TABI combines Typica, Bourbon, and Timor Hybrid genetics, offering sweetness, clarity, and improved resilience. At high elevation and with precise processing, TABI produces a fruit-layered, clean, balanced cup — exactly what this lot delivers.
Processing
This washed lot undergoes a multi-stage fermentation designed for clarity and layered sweetness:
Stage 1: 12 hours submerged fermentation in cherry
Stage 2: 24-hour oxidation
Stage 3: 48 hours anaerobic fermentation in mucilage
Thermal Shock: Hot-water quenching at 50°C to stabilize aromatics
Drying: Stainless-steel dehumidifiers for 36–40 hours
Rest: One week stabilization
The result is a clean, fruit-forward washed coffee with depth, structure, and bright acidity.
