Producer & Origin
This lot comes from Alexander Vargas, producer at Finca La Piragua, a 10-hectare farm in Acevedo, Huila. Alexander began working in coffee at age fifteen, following his parents’ example. By twenty, he shifted his focus toward specialty coffee and has spent more than two decades refining his craft.
His curiosity and commitment to quality led him to experiment with new varieties and processing methods, particularly anaerobic and natural techniques applied to Pink Bourbon, Geisha, and Striped Red Bourbon. His coffees have earned multiple national Cup of Excellence nominations, demonstrating the precision and intention behind his work.
On the farm, Alexander built a dedicated coffee laboratory where he cups and classifies his lots, ensuring high standards from harvest to drying. He also cultivates dragon fruit to support year-round farm stability, a reflection of his broader approach to sustainability and diversification. His work is driven by respect for family tradition, a passion for innovation, and a commitment to producing coffees with a clear and memorable identity.
Processing
This lot undergoes a natural aerobic-sealed fermentation designed to deepen sweetness while preserving brightness:
Fermentation: 60 hours in sealed barrels
Drying: 18 days in covered drying sheds
Moisture: 10 percent
The result is a clean, fruit-forward natural with pronounced dried-fruit sweetness, crisp citrus lift, and a sugarcane finish.
