Producer and Origin
Jhoan Vergara leads experimental processing and global outreach at Finca Las Flores, a family-run coffee farm in Acevedo, Huila. His brothers Carlos and Diego focus on fermentation and drying precision.
At approximately 1,750 meters above sea level, the farm combines careful variety selection with controlled processing to produce expressive coffees with vibrant acidity and aromatic complexity.
Washed Thermal Shock Processing
This coffee follows a controlled, multi-stage fermentation designed to develop sweetness and aromatics while maintaining clarity.
Fermentation begins with 36 hours of anaerobic fermentation in whole cherry, followed by a 12-hour oxidation phase. After depulping, the coffee undergoes another 36 hours of anaerobic fermentation.
For the thermal shock stage, the beans are exposed to water at approximately 50°C for 30 minutes.
Drying takes place over 36 hours in controlled dehumidifying machines, finishing at approximately 10.3% moisture content.
Together, these steps create a vibrant cup with a clean finish and plenty of sweetness.
Why This Coffee Stands Out
This is a coffee for drinkers drawn to bright citrus and playful sweetness. Our light roast highlights the three notes that define this release:
- Froot Loops: nostalgic, fruity cereal sweetness
- Candied Lemon Drop: sweet citrus with a bright, tangy edge
- Green Apple: crisp acidity and a refreshing finish
Let the coffee cool slightly as you taste. Your brewing method, water, and recipe can change which notes stand out most.
