Passion fruit, florals, and candied blueberry come together in Logan, a Castillo and Caturra lot from producer Julio Cesar Madrid at Finca Milán in Colombia. This Reserve release explores the farm’s innovative approach to cultured fermentation through a distinctly tropical, berry-forward cup.

Logan is processed with selected yeast cultures, yellow fruits, and berries during fermentation before being washed and dried. The process gives this coffee its own identity alongside Maypop, another Finca Milán offering in our Reserve collection.

Our tasting notes highlight passion fruit’s tropical character, floral aromatics, and the sweetness of candied blueberry. These descriptors are a guide to what we experience in the cup, not a list of ingredients added after roasting.

Producer and Origin

Julio Cesar Madrid is a third-generation coffee producer whose work at Finca Milán combines experience in Colombian coffee production with a curiosity for fermentation and distinctive varieties.

Located near Pereira in Risaralda, Finca Milán is part of Café UBA, a group of farms known for exploring how carefully managed processing can shape a coffee’s sensory expression.

Logan Cultured Washed Processing

Logan uses a cultured fermentation involving selected yeast, yellow fruits, and berries. Rather than relying solely on the microorganisms naturally present on the coffee, this approach introduces starter cultures to help guide fermentation.

After fermentation, the coffee is washed and dried. The fruit is used during processing at origin, not added to the roasted beans.

Like Maypop, Logan reflects Finca Milán’s curiosity about fermentation. Its combination of yellow fruits, berries, and yeast cultures creates a different expression for you to explore.

Recommended Pour-Over Starting Point

Dose: 25 g, medium grind
Water: 400 g at 197°F
Coffee-to-Water Ratio: 1:16
Pours: 75 g, followed by 175 g and 150 g
Target Brew Time: 3:00–3:30

Adapted from our Reserve pour-over starting recipe. Adjust grind size and temperature to suit your brewer and taste. A slightly coarser grind may help with Chemex.
