This experimental co-ferment combines controlled fermentation with wine yeast, fruit sugars, and strawberry-driven inputs to create remarkable aromatic intensity and a jammy, confectionary profile. In the cup, expect dark cherry soda, strawberry compote, and Red Tootsie Pop, with a juicy structure and a lingering sweet finish.

Sebastián Ramírez is a fourth-generation coffee producer from Quindío, Colombia. After growing up immersed in coffee production, he began exploring fermentation and specialty coffee more deeply over a decade ago, eventually developing the highly process-driven approach that now defines El Placer Farms.
Located in Colombia’s Coffee Axis, El Placer benefits from volcanic soils, mountainous terrain, and high-elevation growing conditions that support slow cherry maturation and complex flavor development.
Processing
Red Fruits is an experimental fruit co-ferment designed to create an intensely strawberry and red-fruit-forward profile.
The coffee undergoes controlled fermentation with wine yeast, fruit glucose, and dehydrated strawberries in an oxygen-restricted environment. This process is designed to build aromatic intensity, sweetness, and a saturated fruit profile while maintaining structure in the cup.
The result is a jammy, candy-like coffee with deep red-fruit character and a long, sweet finish.
