Origin and Producer
This coffee comes from Caldas, one of Colombia’s historic coffee-growing departments and part of the country’s celebrated coffee axis.
Produced by members of the Cooperativa de Caficultores de Anserma, the coffee is grown at an average elevation of approximately 1,500 meters. The mountainous environment and careful washed processing create a clean, stable foundation for decaffeination and roasting.
The lot consists of Castillo and Cenicafé 1, two varieties developed for productive growing conditions in Colombia while maintaining sweetness and cup quality.
Fully Washed Processing
After harvesting, ripe coffee cherries are depulped and washed to remove the fruit and mucilage. The coffee is then carefully dried before being sent to British Columbia for decaffeination.
This fully washed foundation supports the coffee’s clean structure, balanced sweetness, and dependable performance as both espresso and filter coffee.
Swiss Water Decaffeination
The Swiss Water Process removes caffeine without using added chemical solvents.
Green coffee is hydrated and introduced to a proprietary Green Coffee Extract containing water and soluble coffee compounds. Caffeine migrates out of the beans through diffusion before being captured by specialized carbon filters.
Careful control of water, temperature, filtration, and time allows the process to remove caffeine while protecting the coffee’s inherent flavor and aroma.
Roast and Cup Profile
We roast this coffee to a Medium-Dark level to develop milk chocolate sweetness, caramel depth, and gentle warming spices.
The resulting cup has medium body, low perceived acidity, and enough structure to work beautifully as espresso. It also remains balanced and clean when prepared with paper-filter brewing methods.

This Colombia Swiss Water Decaf is the standard decaf espresso at both Kafiex locations.
Its chocolate and caramel profile performs especially well on its own or in lattes, cappuccinos, and other milk-based drinks.
Recommended Filter Recipe
Dose: 20 g, medium grind
Water: 320 g at 202°F
Ratio: 16:1
Pour: 20 g → 200 g → 100 g
Total Brew Time: 3:30–4:00
Grind coarser to shorten the brew time or finer to extend it.
