Producer & Origin

Sebastián Ramírez is a fourth-generation coffee producer from Quindío, Colombia. Raised in a family whose livelihood has long been connected to coffee, he developed an early understanding of cultivation and processing through hands-on work at the farm.

Around 12 years ago, Sebastián began focusing on specialty coffee and exploring coffee beyond traditional production models. His interest in fermentation, controlled processing, and sensory development established the foundation for what would become El Placer Farms.

Located in Colombia’s Coffee Axis, Quindío benefits from volcanic soils, mountainous terrain, and climatic conditions that support slow cherry maturation and complex cup development.

Processing

Purple Fruits is a co-fermented honey coffee created through Sebastián Ramírez’s highly intentional approach to fermentation and sensory development.

The honey process retains part of the coffee’s fruit mucilage while the coffee undergoes controlled fermentation with wine yeast and a blend of purple-fruit ingredients. These additions are used to influence the coffee’s aromatic development and create its concentrated grape and dark-berry character.

The finished cup is loud and fruit-saturated, but still structured, with red grape candy and blackberry sweetness balanced by a tea-like finish.

The project places particular emphasis on natural and honey processing methods, which require minimal water while allowing the team to develop highly expressive cup profiles. El Placer also shares knowledge and processing techniques with local producers, helping create greater opportunities throughout the surrounding coffee community.

With farms in Quindío and Huila, along with trusted producer partnerships across Colombia, El Placer continues to explore the space between traditional coffee production and unapologetically innovative processing.
