Origin & Region

Sourced from smallholder farms across the Sierra Madre de Chiapas, one of Mexico’s most productive and ecologically diverse coffee-growing regions. Elevations of 1,200–1,750 MASL combined with volcanic soil and cool mountain air produce coffees known for sweetness, smoothness, and gentle acidity.

Swiss Water Process (Chemical-Free Decaf)

This coffee is decaffeinated at the Swiss Water facility using a patented method that removes caffeine using only:

  • Filtered water

  • Heat

  • Time

No chemicals are ever used. The process works by:

  1. Steeping green coffee in water to dissolve caffeine.

  2. Filtering the caffeine out through carbon filtration.

  3. Reintroducing the green coffee extract (now caffeine-free) to fresh green coffee.

  4. Equalizing flavor compounds by diffusion until caffeine is removed but taste remains intact.
